Ingredients
  

4 boneless, skinless chicken breasts

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 onion, sliced (preferably red for sweetness)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

1 lemon, juiced and zested

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Chicken: In a large bowl, season the chicken breasts with salt, pepper, smoked paprika, oregano, garlic powder, lemon juice, and zest. Make sure the chicken is evenly coated in the seasoning. Set aside.

      Prepare Vegetables: In another bowl, combine the sliced bell peppers and onions. Drizzle with olive oil and add minced garlic, tossing until well combined.

        Arrange in Baking Dish: In a large baking dish, spread the seasoned vegetables evenly across the bottom. Nestle the chicken breasts on top of the peppers and onions.

          Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and has a nice golden color.

            Garnish and Serve: Once cooked, remove from oven and let rest for about 5 minutes. Garnish with fresh parsley before serving.
