200g Feta cheese

250g cherry tomatoes, halved

150g Kalamata olives, pitted and halved

3 cloves garlic, minced

2 tablespoons extra-virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Fresh basil or parsley for garnish

Freshly ground black pepper to taste

Instructions
 

Preheat your oven to 200°C (400°F).

    In a medium baking dish, combine the halved cherry tomatoes and Kalamata olives. Add the minced garlic, olive oil, dried oregano, red pepper flakes, and a few cracks of freshly ground black pepper. Toss everything together to ensure the tomatoes and olives are evenly coated.

      Make a small space in the center of the tomato and olive mixture and place the block of feta cheese there.

        Drizzle a little extra olive oil over the feta, and sprinkle it lightly with more dried oregano and a pinch of black pepper.

          Bake in the preheated oven for about 25-30 minutes, or until the tomatoes are blistered, the feta is golden, and the entire dish is bubbling.

            Remove from the oven and let it cool slightly. Before serving, garnish with fresh basil or parsley for a burst of color and flavor.

              Serve warm, alongside crusty bread for dipping into the cheesy, tomatoey goodness or over your favorite grain like quinoa or couscous.
