Balsamic Glazed Chicken and Veggies

Ingredients
  

4 boneless, skinless chicken breasts

1 cup balsamic vinegar

3 tablespoons honey

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

1 red bell pepper, sliced

1 zucchini, sliced

1 cup cherry tomatoes, halved

Fresh basil leaves for garnish

Instructions
 

In a medium bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, rosemary, salt, and pepper to create the marinade.

    Place the chicken breasts in a large resealable plastic bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

      Preheat your oven to 400°F (200°C).

        While the chicken marinates, prepare the vegetables. In a large bowl, combine the sliced bell pepper, zucchini, and cherry tomatoes. Drizzle with the remaining marinade and toss to coat evenly.

          Remove the chicken from the marinade and place it in a large baking dish. Arrange the marinated vegetables around the chicken.

            Pour any remaining marinade over the chicken and veggies in the baking dish.

              Bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F) and the vegetables are tender.

                Once done, let the dish rest for 5 minutes. Garnish with fresh basil leaves before serving.
