Ingredients
  

4 boneless, skinless chicken thighs

1 cup cherry tomatoes, halved

1 red bell pepper, sliced

1 zucchini, sliced

1 medium red onion, sliced

3 cloves garlic, minced

1/4 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine balsamic vinegar, honey, olive oil, garlic, dried oregano, salt, and pepper. Add the chicken thighs and toss to coat. Let it marinate for 10 minutes.

    Prep the Veggies: While the chicken marinates, prepare the vegetables. In a large bowl, combine cherry tomatoes, bell pepper, zucchini, red onion, olive oil, salt, and pepper. Toss well to coat.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes per side, or until cooked through and golden brown. Remove chicken from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add the seasoned vegetables and cook for 5-6 minutes, or until tender but still crisp. Stir occasionally to ensure even cooking.

          Glaze the Chicken: Reduce the heat to low. Return the chicken to the skillet and pour any remaining marinade over it. Cook for an additional 2-3 minutes until the sauce thickens and glazes the chicken.

            Serve: Plate the glazed chicken with the sautéed veggies on the side. Garnish with fresh basil before serving.
