For the crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup sugar

3 large eggs

1 tsp vanilla extract

1 tsp lemon juice

1 cup sour cream

For the berry swirl:

1 cup mixed berries (strawberries, raspberries, blueberries)

¼ cup sugar

1 teaspoon lemon juice

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until all ingredients are well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.

          Make the Berry Swirl:

            - In a small saucepan, combine the mixed berries, sugar, and lemon juice over medium heat.

              - Cook for about 5-7 minutes, stirring gently until the berries are soft and the mixture becomes syrupy.

                - Remove from heat and let it cool slightly. Then, mash the berries with a fork leaving some small chunks for texture.

                  Prepare the Cheesecake Filling:

                    - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar, then mix in the eggs one by one, ensuring each is fully incorporated.

                      - Add in the vanilla extract, lemon juice, and sour cream, and mix until smooth and creamy.

                        Combine and Swirl:

                          - Pour half of the cheesecake filling over the cooled crust. Then, spoon in half of the berry mixture and use a knife or skewer to gently swirl it for a marbled effect.

                            - Pour the remaining cheesecake filling on top, and again swirl in the rest of the berry mixture, creating a beautiful pattern.

                              Bake the Cheesecake:

                                - Tap the springform pan gently on the counter to remove any air bubbles.

                                  - Bake in the preheated oven for about 55 minutes, or until the center is set but still slightly jiggly.

                                    Cool and Chill:

                                      - Once baked, turn off the oven and crack the oven door. Let the cheesecake cool in the oven for an hour.

                                        - Afterward, refrigerate it for at least 4 hours, or overnight for the best flavor.

                                          Serve:

                                            - Run a knife around the edge of the cheesecake in the springform pan and gently release the outer rim.

                                              - Slice and serve chilled, optionally garnished with fresh berries or a dollop of whipped cream.
