Ingredients
  

2 medium carrots, peeled and chopped

1 cup vegetable oil

4 large eggs

2 cups all-purpose flour

2 cups granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsweetened cocoa powder

1/2 cup sugar (for the chocolate glaze)

1/2 cup unsweetened cocoa powder (for the chocolate glaze)

1 tablespoon unsalted butter (for the chocolate glaze)

1 cup milk (for the chocolate glaze)

1 teaspoon vanilla extract (for the chocolate glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish or two 9-inch round cake pans.

    Blend Carrots: In a blender, combine the chopped carrots and vegetable oil. Blend until smooth. Add the eggs and blend again until the mixture is well combined.

      Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well.

        Combine Wet and Dry: Pour the carrot mixture into the bowl with the dry ingredients. Stir until just combined. Do not over-mix.

          Bake: Pour the batter into the prepared baking dish or divide it between the cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

            Make the Chocolate Glaze: In a saucepan over medium heat, combine the sugar, cocoa powder, butter, milk, and vanilla extract. Stir continuously until the mixture comes to a boil. Allow to boil for 5 minutes while stirring, then remove from heat.

              Cool and Assemble: Once the cake(s) are done baking, allow them to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely. If using two cake pans, place one layer on a serving plate and spread some chocolate glaze on top. Place the second layer on top and cover the entire cake with the remaining glaze.

                Serve and Enjoy: Let the glaze set for a few minutes before slicing. Serve the cake warm or at room temperature.
