Ingredients
  

4 boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned)

1/2 cup brown sugar

1/4 cup soy sauce

1/4 cup chicken broth

2 tablespoons apple cider vinegar

1 tablespoon minced garlic

1 teaspoon ground ginger

1 teaspoon cornstarch

2 tablespoons water

Salt and pepper, to taste

1 tablespoon olive oil

Green onions, for garnish (optional)

Sesame seeds, for garnish (optional)

Instructions
 

In a small bowl, mix together the brown sugar, soy sauce, chicken broth, apple cider vinegar, minced garlic, and ground ginger. Stir well until the sugar is fully dissolved.

    Season the chicken breasts with salt and pepper on both sides.

      In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until they are golden brown.

        Pour the brown sugar mixture over the chicken and add the pineapple chunks to the skillet. Bring the mixture to a simmer.

          Cover the skillet with a lid and reduce the heat to low. Let it cook for about 15-20 minutes, or until the chicken is thoroughly cooked (internal temperature should reach 165°F).

            In a small bowl, mix cornstarch with water to create a slurry. Add this to the skillet and gently stir to thicken the sauce. Cook for an additional 2-3 minutes until the sauce has thickened.

              Remove from heat and let it rest for a few minutes.

                Serve the chicken drizzled with the brown sugar pineapple sauce, garnished with chopped green onions and sesame seeds if desired.
