4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 can (15 oz) diced tomatoes, drained

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chicken: Rub the chicken breasts with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Ensure they are evenly coated.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced bell peppers and onions, and sauté for about 5-7 minutes until they are tender and slightly caramelized. Remove from heat.

        Layer the Ingredients: In a large baking dish, place the seasoned chicken breasts at the bottom. Top them with the sautéed bell peppers and onions, then layer the drained diced tomatoes over the vegetables.

          Add Cheese: Generously sprinkle shredded mozzarella cheese on top of the entire dish.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil in the last 10 minutes to allow the cheese to brown slightly.

              Rest and Serve: Once cooked, remove from the oven and let it rest for 5 minutes before garnishing with freshly chopped parsley. Serve hot with your choice of sides, such as rice or crusty bread.
