4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon Cajun seasoning (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Juice of 1 lime

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup cherry tomatoes, halved

Fresh parsley for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, black pepper, and lime juice. Add the chicken breasts and toss to coat evenly. Let the chicken marinate for at least 30 minutes, or up to 2 hours for more intense flavor.

    Prepare the Vegetables: While the chicken marinates, slice the red and yellow bell peppers and halve the cherry tomatoes. Set aside.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Once hot, place the marinated chicken breasts on the grill or skillet. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

        Sauté the Vegetables: In the same skillet, add the sliced bell peppers and halved cherry tomatoes. Sauté over medium heat for about 5-6 minutes, or until the vegetables are tender and slightly caramelized. Season with a pinch of salt and pepper.

          Serve: Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Slice the chicken and serve it over the sautéed vegetables. Garnish with chopped fresh parsley.
