8 oz fettuccine pasta

1 lb chicken breast, sliced into strips

1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup low-sodium chicken broth

1/2 cup cherry tomatoes, halved

1/4 cup chopped fresh parsley (for garnish)

Salt and pepper to taste

Fresh lemon wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain and set aside.

    Prepare the Chicken and Shrimp: In a bowl, toss the sliced chicken and shrimp with Cajun seasoning, ensuring they are well coated.

      Sauté the Protein: In a large skillet over medium-high heat, heat olive oil. Add the seasoned chicken strips and cook for about 5-7 minutes, or until fully cooked and golden brown. Remove chicken from the skillet and set aside.

        Cook the Shrimp: In the same skillet, add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp and set aside with the chicken.

          Make the Alfredo Sauce: In the same skillet, lower the heat and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the chicken broth and heavy cream, stirring well. Allow to simmer for about 2-3 minutes.

            Add the Cheese: Gradually whisk in the Parmesan cheese until melted and the sauce becomes creamy. If the sauce is too thick, add a splash of reserved pasta water until you reach desired consistency.

              Combine: Return the cooked chicken and shrimp to the skillet, along with the cherry tomatoes. Toss everything together in the sauce, cooking for an additional 2-3 minutes to heat through. Season with salt and pepper to taste.

                Serve: Plate the fettuccine and top with the Cajun chicken and shrimp Alfredo. Garnish with chopped parsley and serve with lemon wedges for a tangy finish.
