For the Cajun Grilled Chicken:

4 bone-in, skin-on chicken thighs

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

For the Alabama White Sauce:

1 cup mayonnaise

1/2 cup apple cider vinegar

2 tablespoons lemon juice

2 tablespoons horseradish sauce

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

Salt and pepper to taste

1 teaspoon cayenne pepper (optional, for extra heat)

Instructions
 

Prepare the Chicken:

    - In a small bowl, mix the Cajun seasoning, garlic powder, onion powder, smoked paprika, olive oil, salt, and pepper.

      - Rub this spice mix all over the chicken thighs, making sure to get under the skin as well. Squeeze the lemon juice over the chicken and let it marinate for at least 30 minutes (or refrigerate for up to 4 hours for deeper flavor).

        Make the Alabama White Sauce:

          - In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish sauce, Dijon mustard, Worcestershire sauce, salt, pepper, and cayenne pepper if using. Adjust seasoning to taste and refrigerate until ready to use.

            Preheat the Grill:

              - Preheat your grill to medium-high heat (approximately 375°F to 400°F).

                Grill the Chicken:

                  - Once the grill is hot, place the marinated chicken thighs skin-side down on the grill.

                    - Grill for about 6-8 minutes until the skin is crispy and charred.

                      - Flip the chicken and grill the other side for another 6-8 minutes or until the internal temperature reaches 165°F.

                        Rest and Serve:

                          - Once cooked, remove the chicken from the grill and let it rest for 5-10 minutes to retain its juices.

                            - Serve hot with a generous drizzle of Alabama white sauce on top or as a side for dipping.
