2 medium potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup shredded sharp cheddar cheese

1 cup milk (or unsweetened almond milk)

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

Prep the Vegetables: Begin by washing and chopping the broccoli into small florets. Peel and dice the potatoes into small cubes. Chop the onion and mince the garlic.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant.

      Cook the Potatoes: Add the diced potatoes to the pot along with the salt, pepper, and paprika. Stir well and cook for about 2-3 minutes.

        Add Broth & Simmer: Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for about 10-15 minutes, or until the potatoes are fork-tender.

          Blend the Soup: Once the potatoes are tender, use an immersion blender to puree the soup to your desired consistency. For a chunkier texture, blend only half of it, leaving some chunks for added texture.

            Add Broccoli & Cheese: Stir in the broccoli florets and cook for another 5-7 minutes until the broccoli is bright green and tender. Reduce the heat to low, then add the milk and shredded cheddar cheese, stirring until the cheese is melted and fully incorporated.

              Adjust Seasoning: Taste and adjust the seasoning if needed. If the soup is too thick, you can add a bit more broth or milk to achieve your desired consistency.
