Ingredients

1 box of vanilla cake mix

3 large eggs

1 cup water

1/2 cup vegetable oil

1 (3 oz) package of lime gelatin

1 cup boiling water

1/2 cup cherry juice (from jarred cherries)

1 can (20 oz) cherry pie filling

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

Lime wedges and cherries for garnish

Instructions

Prepare the Cake:

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

      Mix the Batter:

In a large bowl, combine the vanilla cake mix, eggs, water, and vegetable oil. Mix according to the package instructions until well combined.

          Bake:

Pour the batter into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.

              Poke the Cake:

Once the cake is slightly cooled, use the handle of a wooden spoon or a skewer to poke holes throughout the cake, about 1 inch apart.

                  Prepare Lime Gelatin:

In a mixing bowl, dissolve the lime gelatin in 1 cup of boiling water. Stir until completely dissolved. Add in the cherry juice, stirring to combine.

                      Pour Gelatin Mixture:

Carefully pour the lime gelatin mixture over the poked cake, ensuring it seeps into the holes. Let it sit in the pan for 30 minutes to absorb.

                          Add Cherry Topping:

Spread the cherry pie filling evenly over the top of the cake, covering it completely.

                              Whip the Cream:

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.

                                  Frost the Cake:

Spread the whipped cream over the cherry topping, creating an even layer.

                                      Garnish and Chill:

Garnish the cake with lime wedges and cherries on top. Refrigerate the cake for at least 2 hours before serving to enhance the flavors.
