Ingredients
  

4 bone-in, skin-on chicken thighs

4 tablespoons unsalted butter, softened

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon paprika

Salt and pepper, to taste

Juice of half a lemon

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix together the softened butter, minced garlic, rosemary, thyme, paprika, lemon juice, salt, and pepper until well combined.

      Pat the chicken thighs dry with paper towels and season them lightly with salt and pepper.

        Carefully lift the skin of each chicken thigh and spread a generous amount of the garlic herb butter mixture beneath the skin.

          Rub any remaining butter over the top of the skin. This will ensure a crispy and flavorful crust.

            Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, place the chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown.

              Carefully flip the chicken thighs, then transfer the skillet to the preheated oven.

                Roast in the oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

                  Once cooked, remove from the oven and let the chicken rest for 5 minutes.

                    Garnish with fresh parsley before serving, and enjoy your delicious herb-crusted chicken!
