1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch pieces

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 tablespoons sesame oil

2 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame seeds (optional)

Salt and pepper to taste

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken cubes and toss well to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for best flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.

      Assemble the Skewers: Thread the marinated chicken, pineapple, red and green bell peppers, and red onion onto the skewers alternately, leaving a little space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure that the internal temperature of the chicken reaches 165°F (75°C).

          Serve: Remove the skewers from the grill and sprinkle with sesame seeds (if using). Serve hot with your choice of side dishes like rice or a fresh salad.
