Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once heated, add the diced onion and minced garlic. Sauté for about 2-3 minutes until softened and fragrant.
Brown the Sausages: Add the crumbled chicken sausages to the skillet. Cook until browned and cooked through, about 5-7 minutes, breaking it apart with a spatula.
Add Zucchini and Tomatoes: Stir in the diced zucchini and halved cherry tomatoes. Sprinkle with Italian seasoning, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender and the tomatoes have started to break down.
Combine with Pasta: Add the cooked pasta to the skillet. Pour in the reserved pasta water a little at a time, stirring everything together until well combined and heated through. Adjust seasoning if needed.
Garnish and Serve: Serve the pasta in bowls, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese on top.
