Ingredients
  

4 bone-in chicken thighs, skin-on

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

3 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season generously with salt, pepper, smoked paprika, cumin, and chili powder. Set aside.

    Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs, skin-side down. Sear for about 5-7 minutes until the skin is crispy and golden. Flip and cook for another 4-5 minutes. Remove the thighs and set aside on a plate.

      Sauté the Bell Peppers: In the same skillet, add the sliced bell peppers and minced garlic. Sauté for about 3-4 minutes until the peppers start to soften.

        Combine and Steam: Return the chicken thighs to the skillet on top of the peppers. Squeeze the lime juice over the dish and cover the skillet. Reduce heat to medium-low and let everything cook together for about 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

          Serve: Garnish the dish with freshly chopped cilantro and serve hot, with rice or crusty bread to soak up the flavors.
