Ingredients
  

1 whole chicken (about 4-5 lbs)

4 cups apple cider

1/2 cup kosher salt

1/4 cup brown sugar

1 tablespoon whole black peppercorns

1 tablespoon crushed garlic (about 4 cloves)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried)

1 tablespoon fresh rosemary, minced (or 1 teaspoon dried)

1 lemon, sliced

2 cups water (to dilute brine)

2 tablespoons olive oil

Salt and pepper, for seasoning

Instructions
 

Prepare the Brine: In a large saucepan over medium heat, combine the apple cider, kosher salt, brown sugar, black peppercorns, garlic, thyme, and rosemary. Stir until the salt and sugar are fully dissolved. Remove from heat and let cool completely.

    Brine the Chicken: Once the brine is cool, combine it with 2 cups of water in a large container or a brining bag. Submerge the whole chicken in the brine, ensuring it's fully covered. Seal the container or bag and refrigerate for 6-12 hours (preferably overnight for maximum flavor).

      Prepare for Roasting: Remove the chicken from the brine and rinse it under cold water to remove excess salt. Pat it dry with paper towels. Let the chicken sit at room temperature for about 30 minutes before roasting.

        Preheat the Oven: Preheat your oven to 425°F (220°C).

          Season the Chicken: Rub the outside of the chicken with olive oil, then season generously with salt and pepper. Stuff the cavity with sliced lemon.

            Roast the Chicken: Place the chicken breast-side up on a roasting rack inside a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy. Baste the chicken with its juices halfway through roasting.

              Rest Before Serving: Remove the chicken from the oven and let it rest for 15-20 minutes before carving. This will allow the juices to redistribute and keep the meat moist.
