Ingredients
  

2 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 2 lemons

2 tablespoons olive oil

4 cups mixed salad greens (spinach, arugula, romaine)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

Fresh parsley, for garnish

Instructions
 

In a small bowl, mix together the garlic powder, onion powder, smoked paprika, oregano, salt, and black pepper.

    Rub the chicken breasts with the olive oil and sprinkle the spice mixture over them, ensuring they are evenly coated.

      Juice the lemons and drizzle half of the juice over the chicken. Let the chicken marinate for at least 20 minutes, or up to 2 hours in the refrigerator for more flavor.

        Preheat the grill to medium-high heat. Once ready, place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

          Remove the chicken from the grill and let it rest for 5 minutes before slicing.

            In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

              Drizzle the remaining lemon juice over the salad, tossing to combine.

                Top the salad with the sliced grilled chicken and sprinkle with feta cheese and freshly chopped parsley for garnish.

                  Serve immediately for a refreshing summer dinner that’s clean and delicious!
