4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 can (13.5 oz) coconut milk

1 tablespoon lime zest (from about 2 limes)

½ cup fresh lime juice (about 3 limes)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon honey or maple syrup

1 tablespoon soy sauce

1 teaspoon red chili flakes (adjust to taste)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

      Make the Creamy Coconut Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant. Pour in the coconut milk, lime zest, lime juice, honey, soy sauce, and red chili flakes, stirring to combine.

        Combine Chicken and Sauce: Return the seared chicken to the skillet, ensuring it's coated with the sauce. Simmer on low heat for about 15-20 minutes, or until the chicken is thoroughly cooked (internal temperature should reach 165°F). The sauce will thicken slightly.

          Serve: Remove the skillet from heat. Serve the chicken on a bed of cooked rice or quinoa, drizzling the creamy sauce generously over the top. Garnish with chopped fresh cilantro and serve with lime wedges on the side for an extra zesty kick.
