1 cup cottage cheese (drained)

1/4 cup almond flour

1/4 cup nutritional yeast (for a cheesy flavor)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

1/2 teaspoon salt (or to taste)

Fresh herbs (like chives or parsley), chopped (optional)

Olive oil spray (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Mix Ingredients: In a mixing bowl, combine the cottage cheese, almond flour, nutritional yeast, garlic powder, onion powder, paprika, and salt. If using fresh herbs, add them to the mixture. Stir until well combined and smooth.

      Shape the Chips: Using a spoon or a small ice cream scoop, portion out the mixture onto the prepared baking sheet. Flatten each scoop slightly with the back of the spoon to form thin rounds, about 1/4 inch thick. Leave some space between them as they will spread a little.

        Bake the Chips: Lightly spray the tops of the chips with olive oil to help them crisp up. Bake in the preheated oven for about 20-25 minutes, or until they are golden and firm to the touch.

          Cool and Crisp: Once baked, remove the chips from the oven and allow them to cool on the baking sheet for a few minutes. They will continue to crisp up as they cool.
