4 medium-sized russet potatoes, thinly sliced

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded gruyère cheese

4 cloves garlic, minced

2 tablespoons unsalted butter

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Garlic: In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to let it brown.

      Make the Cream Sauce: Gradually whisk in the heavy cream, and bring to a simmer. Stir in the thyme, cheddar cheese, gruyère cheese, salt, and pepper. Cook until the cheeses are melted and the mixture is smooth. Remove from heat.

        Layer the Potatoes: In a greased 9x13 inch baking dish, layer half of the sliced potatoes evenly. Pour half of the creamy cheese sauce over the potatoes. Repeat with the remaining potatoes and cheese sauce, finishing with a layer of sauce on top.

          Add the Parmesan: Sprinkle the grated Parmesan cheese over the top layer of the scalloped potatoes for a golden crust.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is bubbling and golden.

              Garnish and Serve: Once cooked, remove from the oven and let it rest for 10 minutes. Garnish with fresh parsley before serving.
