12 oz bow tie pasta (farfalle)

1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach, packed

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Olive oil for cooking

Fresh basil for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the bow tie pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

    Prepare the Sausage: In a large skillet, add a drizzle of olive oil over medium heat. Once hot, add the Italian sausage. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes.

      Sauté Vegetables: Add the chopped onion to the skillet with the sausage and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

        Create the Sauce: Pour in the chicken broth and bring it to a simmer. Let it reduce for about 3-4 minutes. Next, stir in the heavy cream, cherry tomatoes, Italian seasoning, red pepper flakes (if using), and salt and pepper to taste. Allow the sauce to simmer for about 5 minutes until it thickens slightly.

          Combine with Pasta: Add the cooked bow tie pasta to the skillet. Toss gently to coat the pasta in the creamy sauce. If the sauce is too thick, add a little of the reserved pasta water to reach the desired consistency.

            Add Spinach and Cheese: Stir in the fresh spinach and Parmesan cheese until the cheese melts and the spinach wilts, about 1-2 minutes.

              Serve: Check seasoning and adjust if necessary. Serve the pasta hot, garnished with fresh basil and extra Parmesan cheese on top.
