4 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

1 cup sliced mushrooms

1 small onion, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon thyme (fresh or dried)

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until they are golden brown and cooked through (internal temperature should be 165°F). Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced mushrooms and diced onion. Sauté for 5-6 minutes until the onion is translucent and the mushrooms are browned. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Creamy Sauce: Lower the heat to medium and pour in the heavy cream. Stir in the cream cheese until melted and smooth. Add the shredded cheddar cheese, garlic powder, paprika, thyme, salt, and pepper. Stir continuously until the cheese is melted and the sauce is creamy and well combined.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet, spooning the creamy sauce over each piece. Let it simmer for about 3-5 minutes to heat everything through.

            Serve: Garnish with fresh parsley before serving. Enjoy your creamy smothered chicken over a bed of mashed potatoes, rice, or steamed vegetables.
