4 medium russet potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon chili powder

Prep the Potatoes: Start by washing the russet potatoes thoroughly to remove any dirt. You can peel them if you prefer, but leaving the skin on adds extra crunch and nutrients. Cut each potato in half lengthwise, then cut each half into wedges, aiming for about 8 wedges per potato.

    Soak the Wedges: Place the potato wedges in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and will yield a crispier final product. After soaking, drain and pat dry with a clean kitchen towel.

      Season the Wedges: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, cumin, chili powder, sea salt, and black pepper. Mix well to create a bold seasoning blend. Add the dried potato wedges to the bowl, tossing them gently to coat evenly.
