Ingredients
  

For the Chocolate Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Cherry Filling:

1 jar (24 oz) Morello cherries in syrup, drained and chopped

½ cup cherry syrup (reserve from the jar)

2 tablespoons cornstarch

1 tablespoon lemon juice

2 tablespoons sugar

For the Whipped Cream:

2 cups heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

Chocolate shavings (for garnish)

Instructions
 

Prepare the Chocolate Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

        - Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes.

          - Gradually stir in the boiling water (the batter will be thin, don't worry!).

            - Pour evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

              Prepare the Cherry Filling:

                - In a small saucepan, combine the chopped cherries, cherry syrup, cornstarch, lemon juice, and sugar.

                  - Heat over medium heat, stirring constantly until the mixture bubbles and thickens. Remove from heat and let cool.

                    Prepare the Whipped Cream:

                      - In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to over-whip.

                        Assemble the Cake:

                          - Once the cakes are cooled, place one layer on a serving plate.

                            - Spread half of the cherry filling over the first cake layer.

                              - Spread a layer of whipped cream over the cherries, then place the second cake layer on top.

                                - Spread the remaining cherry filling on top, followed by a generous layer of whipped cream.

                                  - Garnish with chocolate shavings and some whole cherries if desired.

                                    Serve:
