Ingredients

2 cups cooked chicken, shredded

1 cup Hawaiian BBQ sauce

4 brioche burger buns

1 cup pineapple rings, grilled

1 cup coleslaw (store-bought or homemade)

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Prepare the Chicken: In a medium bowl, mix the shredded chicken with Hawaiian BBQ sauce until well coated. If desired, heat the mixture in a saucepan over medium heat for about 5 minutes until warmed through.

Grill the Pineapple: Preheat your grill or grill pan over medium-high heat. Lightly brush pineapple rings with olive oil and grill for about 2-3 minutes on each side until caramelized and grill marks appear.

Toast the Buns: While the pineapple is grilling, slice the brioche buns in half and place them cut-side down on the grill for 1-2 minutes until toasted and golden brown.

Assemble the Sandwiches: Layer the BBQ chicken on the bottom half of each bun. Top with a grilled pineapple ring, a generous scoop of coleslaw, and a few slices of red onion.

Finish it Off: Sprinkle the chopped cilantro over the assembled sandwiches, season with salt and pepper, then place the top half of the bun on each sandwich.

Serve: Enjoy your Hawaiian BBQ chicken sandwiches warm, with extra BBQ sauce on the side if desired. Pair with potato chips or a fresh salad for a complete meal!
