Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper.

Prepare the Oatmeal Crust: In a medium bowl, combine the rolled oats, flour, brown sugar, softened butter, salt, and cinnamon. Mix until crumbly. Press about 2/3 of this mixture into the bottom of the prepared baking dish to form the crust.

Make the Rhubarb Filling: In a separate bowl, combine the chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir until the rhubarb is well coated.

Assemble the Bars: Spread the rhubarb filling evenly over the crust in the baking dish. Sprinkle the remaining oat mixture over the top to create a crumbly topping.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the rhubarb is bubbling.

Cool: Remove the baking dish from the oven and let it cool completely in the pan on a wire rack.

Prepare the Glaze (optional): In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled bars if desired.

Slice and Serve: Cut into squares or bars and serve. Enjoy your delicious oatmeal rhubarb bars with a cup of tea or coffee!
