Ingredients
  

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup cream cheese, softened

1 cup powdered sugar

1 large egg

1 teaspoon vanilla extract

2 cups rhubarb, chopped

1 tablespoon cornstarch

1 tablespoon lemon juice

1 tablespoon granulated sugar (for rhubarb mixture)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch square baking pan with parchment paper, leaving a little overhang for easy removal.

    Prepare the crust: In a large bowl, combine flour, granulated sugar, baking powder, and salt. Stir in the melted butter until the mixture is crumbly. Press this mixture firmly into the bottom of the prepared baking pan.

      Bake the crust in the preheated oven for about 10-12 minutes or until it’s lightly golden. Remove from the oven and set aside to cool slightly.

        Make the cream cheese filling: In a medium bowl, beat the softened cream cheese with powdered sugar until smooth. Add the egg and vanilla extract, and continue mixing until just combined.

          Combine the rhubarb: In a separate bowl, mix the chopped rhubarb with cornstarch, lemon juice, and the tablespoon of granulated sugar. Toss until the rhubarb is evenly coated.

            Assemble the bars: Pour the cream cheese filling over the cooled crust and spread it evenly. Sprinkle the prepared rhubarb mixture over the cream cheese layer.

              Bake the bars for an additional 30-35 minutes, or until the filling is set and the rhubarb is softened. The edges may lightly brown, but ensure the center is still slightly jiggles.

                Cool completely in the pan on a wire rack, then refrigerate for at least 2 hours before slicing into squares.
