1 ripe dragonfruit (pitaya), peeled and diced

1 cup fresh lemon juice (about 4-6 lemons)

3/4 cup simple syrup (adjust for sweetness)

4 cups cold water or sparkling water

Ice cubes

Lemon slices and mint leaves for garnish

Instructions
 

In a blender, add the diced dragonfruit and blend until smooth.

    Strain the blended dragonfruit through a fine mesh sieve into a large pitcher to remove any seeds and pulp.

      Add the fresh lemon juice and simple syrup to the dragonfruit juice. Stir well to combine.

        Slowly pour in the cold water or sparkling water, mixing gently to maintain the fizz if using sparkling water.

          Taste the lemonade and adjust the sweetness if necessary by adding more simple syrup.

            Fill glasses with ice cubes and pour the dragonfruit lemonade over the ice.

              Garnish each glass with a lemon slice and a sprig of fresh mint before serving.
