Ingredients

For the Chocolate Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

2 teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Pistachio Cream:

1 cup shelled unsalted pistachios, finely ground

1 cup heavy cream

½ cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (optional, for thinning)

For the Ganache Topping:

8 oz dark chocolate, chopped

1 cup heavy cream

A handful of crushed pistachios for garnish

Edible gold leaf (optional, for decoration)

Instructions

Prepare the Chocolate Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

        - Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes until well combined.

          - Stir in boiling water (the batter will be thin).

            - Pour the batter equally into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

              - Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                Prepare the Pistachio Cream:

                  - In a medium bowl, beat the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to beat until stiff peaks form.

                    - Gently fold in the finely ground pistachios until well combined. If the mixture is too thick, add milk gradually until desired consistency is achieved.

                      Prepare the Ganache:

                        - In a small saucepan, heat the heavy cream until just simmering. Pour over the chopped dark chocolate in a heatproof bowl. Allow to sit for 5 minutes, then stir until smooth and shiny. Set aside to cool slightly.

                          Assemble the Cake:

                            - Once the chocolate cakes are completely cooled, slice each cake in half horizontally to create four layers.

                              - Place the first layer on a serving plate and spread a generous layer of pistachio cream on top. Repeat with the next layers, finishing with the top cake layer.

                                - Pour the ganache over the top of the cake, allowing it to drip down the sides. Use a spatula to smooth it out if needed.

                                  - Garnish the top with crushed pistachios and, if desired, edible gold leaf for added luxury.

                                    Serve:

                                      - Slice the cake into generous pieces and serve with a dollop of leftover pistachio cream, if desired. Enjoy the flavors of Dubai in this deliciously unique chocolate cake!
