Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

Juice and zest of 2 limes

Juice and zest of 1 orange

1 teaspoon honey

2 garlic cloves, minced

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup shredded cabbage

½ cup fresh basil leaves, chopped

¼ cup cilantro, chopped

Hot sauce (optional)

Instructions

In a large mixing bowl, combine olive oil, lime juice and zest, orange juice and zest, honey, garlic, smoked paprika, salt, and pepper. Stir well to create a marinade.

Add the shrimp to the marinade and toss to coat. Let marinate for 15-20 minutes at room temperature.

Preheat the grill or grill pan over medium-high heat.

Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes prior).

Grill the shrimp for about 2-3 minutes on each side, or until they are pink and opaque.

While the shrimp are grilling, warm the corn tortillas on the grill for about 30 seconds on each side until soft and pliable.

To assemble the tacos, place a handful of shredded cabbage on each tortilla, followed by the grilled shrimp. Top with chopped basil and cilantro.

Drizzle with hot sauce, if desired, and serve immediately.
