Ingredients
  

1 pound fresh shrimp, peeled and deveined

1/2 cup fresh lime juice (approximately 4-6 limes)

1 medium red onion, finely chopped

1 medium tomato, diced

1 medium cucumber, diced

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Tortilla chips or tostadas for serving

Instructions
 

Prepare the Shrimp: In a medium pot, bring water to a boil. Add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Remove from heat, drain, and let them cool slightly.

    Chop and Marinate: Once cooled, chop the shrimp into bite-sized pieces and place them in a mixing bowl. Pour the fresh lime juice over the shrimp, ensuring they are well coated. The acidity of the lime juice will cook the shrimp further.

      Add Vegetables: After about 15 minutes, add the finely chopped red onion, diced tomato, diced cucumber, and minced jalapeño to the shrimp. Mix well to combine all ingredients.

        Season: Stir in the chopped cilantro and season with salt and pepper to taste. For a kick, you can add more jalapeño or even a dash of hot sauce if desired.

          Chill: Allow the ceviche to sit in the refrigerator for at least 30 minutes to marinate and enhance the flavors.

            Serve: Once marinated, serve the shrimp ceviche in small bowls, accompanied by tortilla chips or on crispy tostadas. Garnish with additional cilantro if desired.
