1/3 cup vegetable oil

1 large egg

1 tsp vanilla extract

For the Cream Cheese Icing:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

1-2 tbsp heavy cream (to adjust consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder (if using), baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the soda, vegetable oil, egg, and vanilla extract until smooth.

        Combine Mixtures: Slowly pour the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix; some lumps are okay.

          Fill the Liners: Divide the batter evenly among the lined muffin cups, filling each about two-thirds full.

            Bake the Cupcakes: Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
