Ingredients
  

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

Zest and juice of 1 large lemon

3 cloves garlic, minced

1 tablespoon fresh thyme leaves

1 tablespoon fresh rosemary, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 onion, cut into wedges

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

In a large bowl, combine olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt, pepper, and paprika. Whisk until well mixed.

    Add the chicken cubes to the marinade and toss to ensure all pieces are coated. Cover and marinate in the refrigerator for at least 30 minutes to 2 hours for more flavor.

      Preheat your grill to medium-high heat.

        Thread the marinated chicken onto the skewers, alternating with pieces of red bell pepper, yellow bell pepper, and onion.

          Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Remove the skewers from the grill and let them rest for a couple of minutes before serving.

              Serve with your favorite dipping sauce or a side of grilled vegetables and enjoy a delicious summer dinner!
