2 boneless, skinless chicken thighs

4 cups chicken broth

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

2 tablespoons sambal oelek (or other chili paste)

2 tablespoons soy sauce

1 tablespoon miso paste

1 packet of ramen noodles (discard the seasoning)

1 cup baby spinach

2 green onions, sliced

2 soft-boiled eggs (optional)

1 tablespoon chili oil (for drizzling)

Sesame seeds (for garnish)

Cook the Chicken: In a medium saucepan, heat 1 tablespoon of sesame oil over medium heat. Add the chicken thighs and cook for about 6-7 minutes per side, or until fully cooked. Remove from the pan and allow to rest before slicing into bite-sized pieces.

    Make the Broth: In the same saucepan, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant. Add the chicken broth, sambal oelek, soy sauce, and miso paste. Stir to combine and bring to a simmer.

      Cook the Noodles: Add the ramen noodles to the simmering broth and cook according to package instructions (usually 3-4 minutes).

        Add Greens: Once the noodles are cooked, stir in the baby spinach and allow it to wilt for about 1 minute.

          Assemble: Divide the ramen noodles and broth into serving bowls. Top each bowl with the sliced chicken, soft-boiled eggs (if using), and sprinkle with sliced green onions and sesame seeds.
