Fiery Chicken Ramen with Creamy Garlic Sauce

Ingredients
  

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sriracha (or more for extra heat)

1 teaspoon sesame oil

2 teaspoons vegetable oil

4 cups chicken broth

2 packets of instant ramen noodles (discard seasoning packets)

1 tablespoon miso paste

1 cup baby spinach

2 green onions, chopped

1 tablespoon ginger, minced

4 cloves garlic, minced

1/2 cup heavy cream

2 teaspoons lime juice

Salt and pepper to taste

Red pepper flakes (for garnish)

Soft-boiled eggs (optional for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, sriracha, and sesame oil. Add chicken thighs, coat well, and let marinate for at least 30 minutes.

    Cook the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Add marinated chicken and sauté until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and slice into strips.

      Prepare the Broth: In the same skillet, add ginger and garlic. Sauté for 1-2 minutes until fragrant. Pour in the chicken broth and stir in miso paste until well combined. Bring to a simmer.

        Cook Ramen: Add the ramen noodles to the broth and cook according to package instructions, about 3-4 minutes.

          Create Creamy Sauce: In a small bowl, whisk together heavy cream, lime juice, and a little salt and pepper. Stir this creamy mixture into the broth, mixing well until the sauce is smooth and thick.

            Add Greens: Stir in baby spinach and let cook for an additional minute until wilted.

              Assemble the Dish: Divide the ramen noodles and broth into serving bowls. Top with sliced chicken, garnish with chopped green onions, and sprinkle with red pepper flakes for extra heat. If desired, top with a soft-boiled egg.
