4 cups fresh corn kernels (about 6-8 ears of corn)

1 cup ripe tomatoes, roughly chopped

1 cucumber, peeled and diced

1 small red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth (chilled)

1/4 cup fresh lime juice (about 2 limes)

1/4 cup olive oil

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or basil for garnish

Optional: diced avocado and croutons for serving

Prep the Corn: If using fresh corn on the cob, carefully cut the kernels from the cobs and set them aside.

    Blend the Base: In a blender, combine 2 cups of the corn kernels, tomatoes, cucumber, red bell pepper, red onion, minced garlic, vegetable broth, lime juice, olive oil, and cumin. Blend until smooth.

      Season & Chill: Taste the mixture and add salt and pepper according to your preference. If you prefer a thinner consistency, add more vegetable broth. Transfer the blended gazpacho to a large bowl or container, cover, and refrigerate for at least 1 hour to chill and allow the flavors to meld.

        Finish with Fresh Corn: Just before serving, stir the remaining corn kernels into the chilled gazpacho for texture.
