Ingredients
  

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 large eggs

4 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp onion powder

1 tsp dried Italian herbs (oregano, basil, thyme)

1/4 cup milk

1/4 cup ketchup (plus extra for topping)

Cooking spray or olive oil for greasing

Instructions
 

Preheat your oven to 375°F (190°C). Grease a loaf pan with cooking spray or olive oil.

    In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, and chopped parsley. Mix until well incorporated.

      Add the minced garlic, eggs, salt, black pepper, onion powder, Italian herbs, and milk to the chicken mixture. Mix thoroughly until all ingredients are evenly distributed.

        Transfer the mixture into the prepared loaf pan and shape it into a loaf. Smooth the top with a spatula.

          Spread ketchup generously over the top of the meatloaf for added flavor and moisture.

            Bake in the preheated oven for approximately 40-45 minutes, or until the meatloaf is cooked through (internal temperature should reach 165°F/74°C).

              Remove from the oven and let it rest for 5-10 minutes before slicing to allow the juices to redistribute.

                Serve warm with your choice of sides, such as mashed potatoes, green beans, or a fresh salad.
