1.5 pounds baby potatoes (red or yellow)

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary or thyme

1 teaspoon salt

½ teaspoon black pepper

¾ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Optional: ½ teaspoon red pepper flakes (for heat)

    Prepare the Potatoes: Wash and dry the baby potatoes. Cut them in half or quarters depending on their size for even cooking.
