1 lb chicken breast, diced

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, sliced

4 cloves garlic, minced

8 cups low-sodium chicken broth

1 bay leaf

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup egg noodles

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery, sautéing for about 5 minutes until softened.

    Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

      Add the diced chicken breast to the pot, cooking until it turns white, about 5-7 minutes.

        Pour in the chicken broth and add the bay leaf, dried thyme, salt, and black pepper. Bring the mixture to a boil.

          Once boiling, reduce the heat to low and let it simmer for 20 minutes to allow the flavors to meld.

            Remove the bay leaf and stir in the egg noodles. Cook for another 8-10 minutes or until the noodles are tender.

              Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and a squeeze of lemon juice.
