300g spaghetti

400g ground beef or lamb

1 large onion, finely chopped

2 garlic cloves, minced

1 can (400g) diced tomatoes

2 tablespoons tomato paste

1/2 cup red wine (optional)

1 teaspoon dried oregano

1 teaspoon ground cinnamon

1 teaspoon sugar

Salt and pepper, to taste

1/2 cup grated Kefalotyri or Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Meat Sauce: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant (about 5 minutes).

      Brown the Meat: Add the ground beef or lamb to the skillet, cook until browned. Break it apart with a wooden spoon as it cooks.

        Incorporate Tomatoes: Once the meat is browned, stir in the diced tomatoes, tomato paste, and red wine. Allow it to simmer for about 5 minutes, letting the flavors meld together.

          Season the Sauce: Add the oregano, cinnamon, sugar, salt, and pepper. Let the sauce simmer on low heat for another 15-20 minutes, stirring occasionally, until thickened.

            Combine Spaghetti and Sauce: Add the cooked spaghetti into the skillet with the meat sauce. Toss everything together gently until the spaghetti is well coated with the sauce.

              Serve: Plate the Greek Spaghetti and sprinkle with grated Kefalotyri or Parmesan cheese. Garnish with fresh parsley for a pop of color.
