2 large chicken breasts, skinless and boneless

1 ripe mango, peeled and chopped

1 cup fresh pineapple, chopped (canned is fine if fresh is unavailable)

1 bell pepper (red or yellow), diced

1/4 cup fresh cilantro, chopped

3 tablespoons olive oil

2 tablespoons honey

2 tablespoons lime juice

1 teaspoon garlic powder

1 teaspoon ground ginger

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon chili flakes (optional for heat)

Instructions
 

Prepare the Marinade: In a bowl, combine olive oil, honey, lime juice, garlic powder, ground ginger, salt, pepper, and chili flakes. Whisk until well mixed.

    Marinate the Chicken: Place the chicken breasts in a zip-lock bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 1 hour, or overnight for more flavor.

      Prepare the Grilled Fruit: While the chicken is marinating, in a separate bowl, combine chopped mango, pineapple, and bell pepper. Drizzle with a little olive oil and a pinch of salt, then toss to coat.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and spread evenly.

          Grill the Chicken: Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the grill and cook for about 6-8 minutes on each side, or until it reaches an internal temperature of 165°F (75°C).

            Grill the Fruit: During the last few minutes of the chicken cooking, add the chopped mango, pineapple, and bell pepper to a grill basket or skewers. Grill for about 3-4 minutes, turning occasionally until they have nice grill marks and are slightly caramelized.

              Serve: Once the chicken is fully cooked, let it rest for a few minutes before slicing. Arrange the grilled chicken on a serving plate, topped with the grilled fruit and garnished with fresh cilantro.
