2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup vegetable oil

4 large eggs

2 cups grated carrots (about 4 medium carrots)

1 cup crushed pineapple, drained

1 cup chopped pecans or walnuts (optional)

1 teaspoon vanilla extract

½ cup shredded coconut (optional)

For Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (more if needed for consistency)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat together the vegetable oil and eggs until smooth. Add the grated carrots, crushed pineapple, vanilla extract, and chopped nuts (if using). Stir until everything is well combined.

        Combine Wet and Dry Mixtures: Gradually add the wet mixture to the dry mixture, stirring just until moistened. Be careful not to overmix; a few lumps are fine. If you’re adding shredded coconut, fold it in gently.

          Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

            Cool the Cakes: Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.

If the frosting is too thick, add more milk, a tablespoon at a time.

                Assemble the Cake: Once the cakes have cooled completely, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top. Place the second layer on top and frost the entire cake with the remaining frosting.
