4 boneless, skinless chicken thighs

1 cup pineapple juice

1/4 cup soy sauce

1/4 cup brown sugar

1/4 cup ketchup

2 tablespoons rice vinegar

2 tablespoons sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional, for spice)

1 tablespoon green onions, finely chopped (for garnish)

Fresh pineapple slices (for grilling, optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, sesame oil, minced garlic, grated ginger, black pepper, and crushed red pepper flakes. Whisk until the sugar is dissolved. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Grill: Preheat your grill to medium-high heat. If using an outdoor grill, make sure the grates are clean and lightly oiled to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade, reserving the marinade for basting. Place the chicken thighs on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). During the last few minutes of grilling, baste the chicken with the reserved marinade, allowing it to caramelize slightly on the grill.

        Grill Pineapple (optional): If desired, grill fresh pineapple slices on the grill for 2-3 minutes on each side until they have nice grill marks and become caramelized.

          Serve: Transfer the grilled chicken to a serving platter. Garnish with chopped green onions and serve with grilled pineapple on the side. This dish pairs well with steamed rice or a fresh green salad.
