1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1 avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

Salt and pepper to taste

Optional: Feta cheese for topping

Cook the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let it simmer for about 15 minutes or until the quinoa has absorbed the liquid and is fluffy. Remove from heat and let it cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and basil.

        Add Avocado: Gently fold in the diced avocado to avoid mashing it.

          Dress the Salad: Pour the lemon-herb dressing over the quinoa salad and toss gently until everything is evenly coated.
