Instructions

Prepare the Cake Batter:

    - Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with butter and flour.

      - In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

        - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

          - Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.

            - Gradually incorporate the dry ingredients into the wet mixture, alternating with the buttermilk. Mix until just combined.

              - Fold in the chopped walnuts gently.

                Bake:

                  - Divide the batter evenly between the prepared pans.

                    - Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                      - Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                        Make the Cream Cheese Frosting:

                          - In a mixing bowl, beat the softened cream cheese and unsalted butter together until smooth.

                            - Gradually add the powdered sugar, mixing until well combined.

                              - Stir in the vanilla extract and heavy cream (if using) to reach your desired frosting consistency.

                                Assemble the Cake:

                                  - Once the cakes are completely cool, place one cake layer on a serving plate.

                                    - Spread a generous layer of cream cheese frosting on top.

                                      - Place the second cake layer on top and frost the top and sides of the entire cake.

                                        Garnish:

                                          - Decorate the top with extra chopped walnuts and banana slices if desired for a lovely presentation.
