2 cups raw almonds

1 tablespoon honey or maple syrup (optional)

1/2 teaspoon salt (adjust to taste)

1 tablespoon coconut oil (optional, for creaminess)

1/2 teaspoon vanilla extract (optional)

Instructions
 

Preheat the Oven (Optional): If you prefer roasted almond butter, preheat your oven to 350°F (175°C). Spread the raw almonds on a baking sheet and roast for about 10-12 minutes, stirring occasionally until they're lightly golden and fragrant. Allow them to cool slightly before blending.

    Blend Almonds: In your blender, add the almonds (roasted or raw). Start blending on a low setting to begin breaking down the almonds, gradually increasing the speed to high.

      Scrape Down Sides: Stop the blender occasionally to scrape down the sides to ensure all almonds are evenly blended. Continue blending for about 5 to 10 minutes. Initially, the almonds will turn into almond flour, then clump together, and eventually transform into a creamy butter.

        Add Extras (Optional): Once the almond butter is smooth and creamy, you can add honey or maple syrup for sweetness, salt for flavor enhancement, coconut oil for creaminess, and vanilla extract for additional flavor. Blend again until thoroughly mixed.

          Check Consistency: If the almond butter is too thick, you can add a little more coconut oil or a small amount of neutral oil to achieve your desired consistency. Blend again until smooth.

            Store: Transfer the almond butter to an airtight container, and store it in the refrigerator. Homemade almond butter can last up to two weeks.
