1 cup (2 sticks) unsalted butter, softened at room temperature

2/3 cup granulated sugar

1/4 teaspoon salt

2 teaspoons pure vanilla extract

2 cups all-purpose flour

1/2 cup almond flour (optional for added flavor)

1/2 teaspoon baking powder

1/2 cup powdered sugar (for dusting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Scrape down the sides of the bowl as needed.

      Add Vanilla and Salt: Mix in the salt and vanilla extract until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour (if using), and baking powder until well combined.

          Mix Dry and Wet Ingredients: Gradually add the dry mixture to the butter and sugar mixture. Mix until just combined; do not overmix. The dough should be soft and slightly sticky.

            Shape the Cookies: Using a small cookie scoop or your hands, scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving about 2 inches of space between each cookie.
