Ingredients
  

1 pound chicken breast, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

1 bell pepper, cut into 1-inch pieces (any color)

1 red onion, cut into wedges

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a medium bowl, combine honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, black pepper, and red pepper flakes if using. Whisk until well blended. Add the chicken cubes and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Skewers: If using wooden skewers, ensure you’ve soaked them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat.

      Assemble the Skewers: Take the marinated chicken out of the fridge. Thread the chicken pieces onto skewers, alternating with pieces of bell pepper and red onion for color and flavor.

        Grill the Skewers: Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. The chicken should reach an internal temperature of 165°F (75°C).

          Glaze During Cooking: In the last few minutes of grilling, brush the remaining marinade over the skewers for extra flavor. (Make sure to reserve some marinade before adding the chicken to avoid contamination).

            Serve: Remove from the grill and let the skewers rest for a few minutes before serving. Garnish with chopped green onions or sesame seeds if desired. Enjoy with steamed rice, noodles, or a fresh salad for a complete meal!
